Anyone have some simply but healthy recipes?

I live on my own right now and I'm going to make a lifestyle change as I'm so sick of eating junk and things that are ';frozen'; convenient. I love fruits and veggies but I'm truly not a big meat eater. I only tend to really like chicken and tuna.Anyone have some simply but healthy recipes?

Easter Bunny Salad





Lettuce


1 can pear halves


Whole cloves


Almond halves


Cottage cheese





Put a lettuce leaf on a plate. Lay half a pear on lettuce flat side down. And place a clove on each side of the narrow part of the pear for eyes (2 cloves). And two almond halves for the ears. And 1 teaspoon cottage cheese for a tail.





Miso Soup





Ingredients:


录 cup sliced dulse seaweed


5 cups hot water


1 TBS minced,fresh ginger


5oz firm tofu, cut in 录 inch cubes


陆 cup minced scallion


3 TBS miso


录 tsp white pepper


salt to taste








Directions:





Heat 1TBS water in a medium soup pot. Healthy Saut茅 ginger in water over medium low heat for about 1 minute stirring constantly.


Add rest of water, tofu and seaweed. Simmer for about 5 minutes over medium heat.


Add scallion, miso, salt and pepper. Mix and serve.


Serves 4





10 Minute Seared Tuna





12 oz of tuna cut into 2 steaks


2 TBS mirin rice wine, (can be found in Asian section of supermarket)


1 + 1 TBS fresh squeezed lemon juice


2 TBS soy sauce


1 TBS minced fresh ginger


3 TBS minced scallion


salt %26amp; white pepper to taste








Directions:





Preheat 10-12 inch stainless steel skillet over medium high heat for 2 minutes.


While pan is preheating, rub tuna with 1 TBS lemon juice, season with a little salt and white pepper, and prepare ginger and scallion.


Cook tuna for 1-2 minutes on each side, depending on thickness, and remove from pan. 1 minute will cook it rare. This is our Stove top Searing cooking method. Place on a plate.


Turn heat down to medium and add rest of ingredients to pan in order given, and cook for 1 minute. Season with salt and pepper. Pour over tuna and serve.


Serves 2
I eat tuna on salads w ranch and cut up cucumbers.tomato,onion. etc..so yummy! that was my favorite dish when i was prego.





another salad is southwestern


mix gaucamole and ranch for dressing


on top of shredded lettuce add


black beans


corn relish


onion


tomato


cilantro


bacon


hard boiled eggs.


chicken


(it's a version of one on the chilis menu its yummy!)





its easy to do stir fry veggies and chicken you can find bottle sauces like teryaki and pour over it.so good!in produce section you can find bags of veggies made by dole for this already cut up!
Well theres this soup... French Lentil Soup... basically you just throw everything into the pot with some water and it makes great soup....
