I'm looking for the Potato Soup recipe by Simply Homemade?

I'm not familiar with that recipe, but this is another quite good potato soup recipe, that's made with leeks, sharp cheddar and bacon (you can exclude the bacon and use vegetable stock for the base if you prefer a vegetarian version).

I don't know that recipe, but here's one that is absolutely delicious :

1 1/2 lbs potatoes, peeled and roughly chopped

2 onions, peeled and roughly chopped

2 oz butter

2 pints chicken stock

Salt and pepper to taste

Melt the butter in a large saucepan and throw in the potatoes and onions.

Saute for 5 minutes

Add the chicken stock and simmer for 25 minutes

Liquidize (a stick blender is best - less washing up!)

Add salt and pepper to taste.

Couldn't be easier - or yummier!
